All About Baking (Mar 11 – 15, 2013, second session Aug 12 – 16, 2013, Manhattan, Kansas)
“A broad overview of ingredients and processes related to the modern wholesale baking industry. The seminar immerses participants in a week where they make and sample a variety of popular baked goods.Participants spend four afternoons in AIB’s well-equipped baking labs where they produce pan and hearth breads, flour tortillas, batter cakes, cinnamon rolls, coffee cakes, cake doughnuts, and yeast-raised doughnuts, using the same ingredients and methods common in bakeries. The seminar increases awareness of the baking industry for people who provide it service, equipment, and ingredients. Participants develop an appreciation of the baker’s job and problems while learning the industry’s vocabulary. The seminar also serves as a perfect orientation to the science and art of baking.”
