Background

In this application study the internal cohesive strength and toughness of three different batches of premade, store-bought burger patties was tested with the TA-226 Tug Fixture. The burger patties varied by fat content at 80% lean, 85% lean, and 90% lean. Three patties from each batch were cooked to a medium standard and tested following precise instructions.
