TTC had another great week at the IFT’s Annual Event and Expo! This event, held annually in Chicago, is put together by the Institute of Food Technologists. We met many new people in all corners of the food industry as well as had a chance to catch up with a good number of long-term friends.

This year the topics of interest centered around our new fixtures and features in Stable Micro Systems’ Exponent Connect software. On the testing side, many people inquired about how to optimize methods for textural attributes that they are trying to pick up, or how to test products with unique textural challenges.

We had so many great conversations, including discussing different methods of testing cheese, how cakes release from their baking pans, and how to test whipped cream. From the crispiness of pickles to the hardness of pet food, the cohesiveness of salmon burgers to the firmness of shortening, we heard a wide range of questions and chatted with people from all over the globe.
