Background

Hard candies are solid confections available in various shapes, sizes, and flavors, offering consumers a long-lasting taste and a distinctive crunch. This study investigates how candy thickness affects the firmness of different hard candies when tested both whole and partially consumed. A TA.XTPlus Texture Analyzer, Exponent software, and a TA-015 45° stainless steel cone probe were used to measure firmness, stiffness, total work and fracture properties of hard candies.
