Background

Evaluating bacon’s crispiness and firmness is challenging because each strip has a unique geometry, an uneven distribution of fat and meat, and a distinct curvature and shape after cooking. This study presents the results of assessing the crispiness and firmness of pork bacon with a TA-044 Craft Knife and with a TA-007SSF Slice Shear Force blade.
