Boiled Potatoes Tested Three Ways

Background

In this application study a single bag of Russet potatoes was diced, boiled, and tested with the TA.XTPlus Texture Analyzer, Exponent software, and three fixtures: TA-93WST Wire Screen Forward Extrusion Fixture, TA-65 Multiple Puncture Rig, and TA-25C Crunchiness Rig. The TA-93WST’s plunger compressed samples until they were sheared across a wire screen at the bottom of the vessel. The TA-65 has 13 tines which penetrated down through the diced pieces. The TA-25C (2.1” diameter) has a unique shape which allows both compression and shear to occur as the probe descends through a column of diced pieces.
