Background

The TA.XTPlus Texture Analyzer is used extensively by major brands in the alternative foods industry to objectively quantify the physical properties of their products. The TA.XTPlus can aid companies in developing new food products that emulate the physical characteristics of traditional products, help determine and refine physical characteristics of new products, and help ensure consistent production through quality control testing. In this application study the TA.XTPlus was used to measure the physical properties of alternative cheeses and comparable traditional cheeses. The sample geometries which were tested were block, sliced, and shredded cheese.
